Homemade Mushroom Soup
Sometimes we need to prepare something special that takes us out of our usual menus when we are going to have guests, or we are simply tired of eating the same thing and want to vary our tastes. That is precisely what you will achieve with this recipe of homemade mushroom soup.
Directions
Heat a pot over medium-high heat with 3 tablespoons of olive oil.
Add 2 sliced scallions, 1 clove of sliced garlic, 4 oz. of diced bacon, a red chili pepper and let them stir-fry for about 3 minutes.
Take out the red chili pepper. Add the shiitake mushrooms.
Add salt and black pepper to taste, and cover with 4 cups of chicken broth and 1/2 cup of light cream.
Add 1/2 cup of grated parmesan cheese, cover the pot and cook over medium heat for 15 minutes.
Turn off the soup ready to serve.
Once served on plates, add some fresh chopped parsley, a little more ground pepper and a few drops of raw olive oil.
This is an ideal soup to raise our spirits to heaven!

10 oz shiitake mushrooms
2 scallions
1 clove of garlic
1 red chili pepper
4 oz bacon
3 tablespoons of virgin olive oil
4 cups of chicken broth
1/2 cup of light cream
1/2 cup parmesan cheese
Fresh Parsley
Salt
Black pepper
